Instructions

  • Make the simple syrup: In a small saucepan combine honey, water, ginger, and cinnamon stick. Place the pan over medium heat and bring the contents to a gentle simmer, stirring frequently so the honey dissolves. Reduce the heat to low and let gently simmer for 5 minutes.

    Next, remove the pan from the heat. Set the simple syrup aside and let steep for 15 minutes. Once the time is up, strain the simple syrup into a container or liquid measure, discarding the solids. Set aside until ready to use.
