I fall into the category of picky eater and that is especially true when it comes to meatloaf. I basically only like my own meatloaf, LOL! My favorite way to make meatloaf is to make mini meatloaf in the Nuwave Oven. They cook quickly and are just delicious! The Nuwave Oven doesn't heat up the whole kitchen and gives the mini meatloaf a nice crunchy top!

Ingredients for Mini Meatloaf

  • 1 pound ground beef
  • 1 egg
  • 2 cups crushed croutons, oatmeal or bread crumbs
  • 1 teaspoon onion powder
  • 1/2 teaspoon pepper
  • 3/4 teaspoon salt
  • 1/4 cup evaporated milk
  • 1/4 cup BBQ sauce (plus extra to drizzle on top if desired)

How to Make Mini Meatloaf in the Nuwave Oven

First put all your ingredients into your stand mixer bowl and use your dough hook to mix the ingredients. If you don't have a stand mixer you can put the ingredients into a large bowl and mix by hand. You may need to use your hands to really get the ingredients mixed well.

Form small loaves with the meat mixture using your hands. Place the loaves onto the Nuwave Oven rack. If desired you can put a small amount of BBQ sauce on top of each mini meatloaf and spread around with a knife.

Cook times will vary a little based on how thick/large you make each mini meatloaf. I cooked mine about 7 minutes and then flipped them over and cooked another 7 minutes. When you think they are done you might want to cut one open to make sure it is cooked well inside! You can always add a minute or two at a time until done.

Why the Nuwave Oven Makes the Best Mini Meatloaf

I used to make my mini meatloaf in the oven before I got a Nuwave Oven. They were good….but took a lot longer to cook and it was a pain to make sure the grease drained off. Using the rack feature of the Nuwave Oven takes the grease issue out of the equation! The rack allows all the fat and grease to drop down into the bottom pan and allows the meat to cook without the added calories!

The quick cooking time and the fact that this kitchen appliance doesn't heat up your house are other great benefits! There are definitely some foods that work better than other in the Nuwave Oven. I have a list of what I think are the best foods to make in the Nuwave Oven. I have been adding more and more yumminess to myNuwave Oven recipestab!
