Universal Peanut Noodle

This peanut spicy noodle ticks all the boxes for spicy noodle lovers! It's savoury, spicy, umami, nutty, and a bit tangy in taste. No cooking is required, and it's super easy to customise to your own taste.

This recipe is perfect for lazy day dinners or for the whole family. The portion size on the recipe card can be increased or reduced.

If you are not a peanut fan, you can easily swap peanut butter for sesame paste, soy butter, chickpea butter, or a choice of no-nut butter. It’s a great protein-rich noodle dish for vegans and vegetarians.

What type of peanut butter to use?

My top choice: I highly recommend using organic smooth peanut butter, which contains 100% peanuts and has a naturally rich, creamy, nutty flavour. It doesn’t contain any palm oil, added sugar, or additives.

Can I use regular sweetened peanut butter? Yes, you can if you have it on hand, but please be aware that the sauce might be sweeter than raw peanut butter.

How about crunchy ( chunky ) peanut butter? It’s a great option if you love a bit of crunchy texture in the sauce.

Basic Ingredients

Ramen Noodles

I find the ramen noodles are the best texture for soaking up the sauce. You can use up any instant ramen packets sitting in the pantry. Discard the seasoning sachets, boil the noodles according to the packet instructions, and toss with this peanut sauce.

For Chilli Oil

  • Dried crushed chilli
  • Fresh Garlic
  • Sesame seeds
  • Cooking oil - preferably neutral flavour oil

For Peanut Sauce

  • Peanut butter
  • Sesame oil
  • Rice vinegar
  • Regular soy sauce
  • Dark soy sauce
  • Vegetable or Chicken bouillon

Garnish

  • Spring onions ( scallions )
  • Roasted peanuts

How to cook spicy peanut noodles?

1. Make Chilli Oil

In a heat-proof bowl, add crushed chilli flakes, minced garlic, and sesame seeds. In a small pot, heat neutral-flavour oil until smoking hot. Turn off the heat once the smoke starts to appear.

Gently pour hot oil over the chilli garlic bowl and let it sizzle for a few seconds. Stir it well and set it aside. ( If you are using store-bought chilli oil, you can skip this step. )

2. Boil the Noodles

Fill the pot with water and bring it to a boil. Add noodles and cook the ramen noodles for 3-4 minutes or until al dante. ( Cooking time can be varied depending on the types of noodles you use. )

3. Make Chilli Peanut Sauce

While the noodles are cooking, you can prepare the peanut sauce. In a ramen bowl or large serving bowl, add the prepared chilli oil, peanut butter, regular soy sauce, dark soy, rice vinegar, and sesame oil.

Scoop a couple of tablespoons of boiling noodle water and pour it into the sauce. Mix everything well until the sauce becomes smooth and creamy.

4. Combine Noodles and Sauce

Once the noodles are cooked, drain the water out and place it in the peanut sauce. Coat the noodles well with the sauce. ( Add more hot water if the sauce is too thick and sticky. )

Divide the noodles into each serving bowl. Garnish with toasted sesame seeds, crushed peanuts, and chopped spring onions.

Choice of Noodles

You can use any of your favourite noodles or pasta, from Asian to Italian. My top favourites are ramen, udon, egg, and pad Thai rice noodles.

Udon: If you love chewy, thick wheat noodles, Japanese udon noodles are a great option. Vacuumed, sealed udon is super quick to prepare if you are on the go. I’ve used udon in my Quick Peanut Udon recipe.

Egg Noodles: You can never go wrong with peanut sauce and egg noodles. Fresh egg noodles or dried egg noodles of your choice.

Toppings you can add

Level up your spicy peanut noodles with a mix of toppings and garnish! For a bit of crunch, add some roasted crushed peanuts, toasted sesame seeds, crispy fried shallots, or fried garlic.

If you love extra veggies, topped with fresh spring onions, shredded cabbage, bean sprouts, steamed/blanched broccoli, pak choi ( bok choy ), etc.

Love additional protein? Simply add boiled egg, hard-boiled egg, Japanese ramen egg, Korean Mayak egg, Char Siu, Cooked Prawns, Soy Sauce Chicken or throw in any leftover cooked chicken or seafood.

FAQ

Can I use pasta for this recipe?

Spaghetti or angel hair pasta goes well with this chilli peanut sauce. If you prefer flat pasta, fettuccine, linguine, or tagliatelle, they are also great.

Can you add readymade chilli oil?

Yes, you can save more time by using store-bought chilli oil, chilli garlic oil, chilli peanut oil, or chilli black bean oil. If you already have Homemade Chilli Oil, you can add it to the sauce.

Can you make it ahead?

You can prepare the chilli oil and chilli peanut sauce one day ahead. Then boil the noodles and toss with the peanut sauce just before serving.

How do you reheat it?

When peanut noodles get cold and are left for a longer period, they can become dry, thick, and sticky. To loosen up the sauce, you might want to add a splash of water and reheat it in the microwave until hot.

Do you serve it hot or cold?

I personally love to have it warm or hot. If you like it cold, like cold noodle salad, once the noodles are boiled, rinse with cold water before adding to the sauce.

Ingredients

  • 2 pack Ramen noodles Or a choice of noodles or pasta 2 servings

For chilli oil

  • 2 cloves Garlic Minced/chopped
  • 2-3 tbsp Chilli flakes Dried crushed chillies
  • 1 tbsp Sesame seeds
  • 2-3 tbsp Cooking oil Neutral flavour oil like sunflower, canola, peanut oil, etc.

For Peanut Sauce

  • 4 tbsp Natural peanut butter Organic peanut butter or a choice of peanut butter
  • 1 tbsp Regular soy sauce Or light soy sauce
  • 1 tbsp Rice vinegar Or lemon juice
  • 1 tsp Dark soy sauce
  • ½ Chicken bouillion Or vegetable bouillon cube or powder
  • 1 tsp Sesame oil
  • 3-4 tbsp Noodle boiling water Or hot water, add more water if needed

Garnish

  • 1-2 Spring onions Scallions, cut thin slices
  • 1 tbsp Roasted peanuts Crushed
  • Sesame seeds

Instructions

  • In a heat-proof bowl, add crushed chilli flakes, minced garlic, and sesame seeds. In a small pot, heat neutral-flavour oil until smoking hot. Turn off the heat once the smoke starts to appear.   • Once the noodles are cooked, drain the water out and place it in the peanut sauce. Coat the noodles well with the sauce. ( Add more hot water if the sauce is too thick and sticky. ) Divide the noodles into each serving bowl. Garnish with toasted sesame seeds, crushed peanuts, and chopped spring onions.

Notes

  • Chilli oil - Adjust the amount of chilli oil to your taste. You can increase or reduce the amount. You can keep the leftover chilli oil in the dried clean jar for later use.
  • Noodles - You can add your favourite type of noodles, such as egg, wheat, rice, or pasta.
  • Adjust the heat - Increase or reduce the chilli oil according to your taste.
  • More toppings - You can add more toppings, boiled eggs, cooked chicken, cooked prawns, crabstick, etc.
