Welcome to Day 5 of my Ramadan 2023 series! When it comes to iftar (which is the meal when you break your fast), my husband and I would some times be in the mood for a whole spread, with appetizers, the main course, and dessert. So on those days, bruschetta comes in clutch as it’s super easy to make, while still providing a ton of flavor.

What Is Bruschetta?

Bruschetta is an Italian antipasto made from bread that’s been toasted or grilled, then is rubbed with garlic, and topped with a drizzle of olive oil. However, it is commonly paired with a topping made from tomatoes and basil.

Along with the addition of burrata cheese in this recipe, the flavors all meld together perfectly to make a delicious toasty delight.

The best bread to use are ones that are crusty. I like to use a baguette, but other good options include ciabatta, sourdough, and focaccia.

Roasted Garlic Bruschetta

I was first inspired to make bruschetta at home after trying the most amazing one during Chicago Restaurant Week. But my attempts came with a twist. I’m a garlic girl through and through, and have a huge love for roasted garlic.

So with that in mind, I decided to swap the step of rubbing fresh garlic cloves on toasted bread with spreading on roasted garlic. And together with the burrata, everything was just *chefs kiss*. I was sold!

So much so that I had it for 3 days in a row because it was too good.

Ingredients You’ll Need

  • Baguette:or any other bread you like
  • Grape/cherry tomatoes
  • Basil leaves
  • Olive oil
  • Balsamic vinegar
  • Salt
  • Pepper
  • Burrata cheese
  • Roasted garlic

How to make burrata bruschetta with tomatoes

Preparation

  1. Take burrata out of the fridge to get it to room temperature.
  2. Slice the baguette in half lengthwise. Drizzle olive oil all over the exposed area of the bread. Drizzle olive oil to a pan over medium heat and add the baguette. Press down to toast evenly. Toast on both sides until golden brown.
  3. Slice the grape tomatoes into quarters. Take a few basil leaves and stack it together. Roll the leaves together tightly and slice the leaves as thinly as possible. Add everything to a bowl and season with salt and pepper. Add balsamic vinegar, olive oil and toss to mix well.

To assemble

  1. If using roasted garlic, mash and spread a few cloves on top of the toasted baguette. If using a fresh garlic clove, rub the garlic on the toasted baguette.
  2. Place the burrata on top of the baguette and spread it all over. Add the tomato basil mix on top. Optional: Drizzle a bit of the liquid from the tomato basil mixture on top. Garnish with fresh basil leaves on top. Enjoy!

How to roast garlic?

To roast garlic, if you are using the whole bulb: Slice the top and drizzle olive oil all over. Cover in foil and roast in the oven for 30-40 minutes at 400 F. If you are using cloves, add to a small oven safe ramekin and cover with olive oil. Cover and roast in the oven for 30 minutes.

Grape tomatoes color variety

It’s not necessary, but I like to use different colored grape tomatoes to add a variety of color to the toast.

Bread substitute

If you don’t like or can’t find a baguette, you can use any bread that you like.

Burrata substitute – stracciatella

If you can’t find burrata, to get stracciatella (the creamy soft texture inside burrata): shred fresh mozzarella and mix with a bit of heavy cream and a pinch of salt. Mix/mash until you get a creamy texture.
